Recipe: Green Monster Smoothie

So I am at it once again. A pointless endeavor to get rid of this pregnancy weight that simply refuses to let go.  Or rather, the daily after-dinner-ice cream-delight that I refuse to let go. Let go, woman!

Let it go...

So once upon a time, I was able to eat no sugar at all, and I was fine.

I mean, the diet recommended a 2 week cleanse, but I was able to go for about 2 1/2 months (yah not exactly the most healthiest of choices BUT it did prove to me that I could do it) before I moved forward with phase two. So, ever since then, my thought process has always been: ahh, i'll just do that again, you know, whenever I want to. However it hasn't been so easy to do. I mean, first of all, at that time I was participating in the sugar free lifestyle with a few co-workers who I spent most of the day with, so it became part of our culture. It's not so difficult to do something when it's part of group-think {that's right, there's some of my psychology minor classes coming back in full swing}. Whereas, today, there's no sense of accountability since I'm at home with the boys, well except for Colin but he couldn't care less what I ate, as long as it's not chocolate because then he has to have some.

So I'm going to watch my intake. Starting today. And you all can hold me accountable. Seriously.

Today's lunch: "Green" Monster Smoothie delight =)


I used to have these all the time, about 2 years ago. I just love smoothies and in this case, adding my fav veggies {spinach} to it was just an added bonus. So today I made it again and it was delicious and even Colin got into it and devoured about half of mine after he had already ate his own lunch! But how could I complain? Oh all those wonderful vitamins he was adding.... { A, C, K, iron, fiber, folate, magnesium, potassium, protein, calcium...just to name a few }

So here's my recipe (there are a million out there) that I have found to provide just the right amount of sweetness. (Also, I add berries which you don't need, but if you add them, it will change the color to be more purplish hue rather than green).

Green Monster Smoothie


Ingredients:

  • 1 small frozen ripe banana, peeled and coarsely chopped
  • 1/2 cup frozen berries
  • 1 cup baby spinach
  • 1 tbsp Peanut Butter (I used Skippy's Natural)
  • 1 cup vanilla Greek Yogurt (I used Chobani)
  • 1/4 cup milk 

{make it a skinny and feel free to substitute the milk with almond milk and use fat-free greek yogurt instead}


Instructions:
Throw all ingredients into a blender and blend until smooth. {If you don't use any frozen fruit, you will need to add ice}.

Try it out and enjoy! =)


Note: You can throw anything you want in there really, so you should experiment. You can use kale, or add flax seed, chocolate; try other fruits, some even throw in protein powder or a little coffee for a morning pow-wow. Again, there are TONS of recipes online, but I think this is a good place to start.







The Fat Lady Sings...

So this is it. I have come to the end of my journey at State Bank. I'm sitting here about to head out the door for the last time. Wow, it's kinda crazie and honestly, I don't know what to do with this mixed bag of feelings. For one, I am a mommy of two and the idea of going back to work was not really in the cards, well unless I was going to start making a bizillion more dollars than I was now. Also, I was beginning to think my time at State Bank was coming to an end anyway.  Like I said on monday, I was ready to move on and see what else was out there (well that was before baby number 2). So now, here I am, it's my last day and it truly is so bittersweet. I've come to value many of the people I've come to know as friends and my mornings are never going to be the same. I will miss the hustle and bustle of rushing out of the house, coffee in hand, so as to be greeted by the familiar faces at State Bank. This will be the last morning I will have like that...for who knows how long.  But then tomorrow will begin the first of many and I'm actually thrilled for it to start. Obviously, for those of you who know me, I thrive off of change and new experiences, so that may be an attributing factor to my excitement, (of course that along with the beautiful faces of my new mornings to come)! Sooo, I say check back with me in a month and I'll let you know if the flame has faded or remains strong...

The Last Monday


::Sigh::

It’s the last Monday of the last three days at the Bank. I’m certain this subject will be the reigning topic of discussion for this week since it’s pretty much all I have been thinking about. Don’t get me wrong, I’m actually not sad. Well, let me rephrase that. I AM sad about leaving the wonderful friends I have made, but I am excited to see what starts next.  So it’s not that I’m thinking about it in a depressed~melancholy kind of way. It’s just a huge change that is happening and no matter how I feel about it, it’s overwhelming. I’m going to be a stay at home mom. I never thought of myself as a stay at home anything before. I’m more of a get-out-of-the-house, adventurous, people-person kind of gal {with my occasional i-need-my-time-away-from-everyone-and-at-home-sometimes}. But today, as I dropped off my boys, all I was thinking was “I wish I could stay at home with you guys”. It really has been a change of perspective for me. I will continue to keep my flair for the creative, of course {so stay tuned for more on that} but in the meantime, mommy-dom will be what consumes my days, and I’m rather thrilled.  

New Year...New Blog

No, this blog isn't going to be an analysis of the varieties of coffee that one should obsess over. If that was what you were looking for, I apologize for the disappointment. This blog, is about my "crazie" life to date ...as a wife, a mom of two "dudes", and a whole bunch of other "things and stuff" (my hubby's phrase) that consumes my day to day. I'll be the first to admit, coffee is not the healthiest fuel for the body, yet it still is one among many that I rely on. Don't worry, I am highly aware that balance is key.  I cannot tell a lie though; I am heavily dependent on coffee. So as I pour out the happenings of my daily grind (pun intended) I find it to be a brilliant way to describe this log of my life.
